Recipe: Ginger Lime Salmon with Mango Avocado Salsa

Sometimes the best things in life are the simple ones. This easy salmon is wonderful broiled in the oven, or take it outside on the grill to make the most of a warm spring evening.

Ginger Lime Salmon with Mango Avocado Salsa

Serves 4

Ingredients:

4- 6oz wild salmon fillets, skinned
2/3 cup fresh lime juice (about 5 limes)
1/3 cup honey
½ teaspoon grated peeled fresh ginger
1 mango
1 avocado

Instructions:

Combine lime juice, honey, and ginger in a small bowl. Remove just under half of mixture to use later, then immerse salmon in the remaining liquid and marinate for half an hour to overnight.

When ready to cook, preheat oven broiler. Place salmon (including the marinade) on a lightly greased broiler pan and broil about four minutes on each side.

Meanwhile, cube mango and avocado and toss together with remaining lime juice mixture. When salmon is done broiling, top with avocado mango salsa. Serve with whole grain and vegetables of your choice.
